(I am posting this Monday night as we may have a snow day tomorrow. If that's the case, I'M SLEEPING IN..hopefully) =)

It worked!! Normally I can't get to graphics from my home laptop.

Ok, I would be a really mean and selfish person if I did not share my REALLY EASY but REALLY YUMMY recipe with you all! It's embarrassingly simple and I make it for all new moms to freeze and I'm always ashamed when they ask for the recipe, cause it's so simple.
2 cups (more or less) cooked chicken or turkey (ok, in my own defense, I normally do boil a whole chicken in fresh herbs and then make a bunch of broth out of it....but you can use easy chicken from the store!), cut into bite sized pieces
2 cans cream of potato soup
1 can Veg-All
package of refrigerated pie crust (the ones in the biscuit section, that you roll out
Salt/pepper/garlic/sage, etc to taste
Line a pie pan with one of the crusts. Mix the chicken, soup, veg-all and spice per your taste. Pour into prepared pan. Top with 2nd crust and seal/crimp edges, make 4 slits in the top of the crust. Bake at 350 for 45 minutes, until the crust is browned and ready. You may need to cover the edges with foil to prevent overbrowning, depends on your oven.

How are you liking that Wii fit? I really should do SOMETHING to move my body once in a while, LOL.
That's awesome that you're going to go to school. I am in the process of applying for a Master's program as well, and it terrifies me. I am attempting to get a Master's in Social Work, and become a medical social worker, but with 4 kids I may not get very far!!
Nursing is great because there is SUCH a need, and you will ALWAYS have work! Great choice! I would do nursing too if I could stick a needle in anyone, LOL
My DH is a doctor, and I well remember him complaining about some of the classes he had to take and how he didn't think they would help him at all in caring for patients in his career (And they probably haven't!)

Our Tuesday is almost over but I will still talk about it.
I volunteered at the hospital today helping DH, so that took up all my morning and some of my afternoon. I ate lunch in the cafeteria there with Michael (Yucky hospital food!).
The kids are now at CCD, and I feel like this is the first peace and quiet I've had since last night. Michael is going to pick them up at 6 on his way home, so I think I'm in for the night. Yay!!
Not much going on here today.
Veg-all is just a canned vegetable combo, found in the regular canned veggie aisle! I suppose you can substitute frozen mixed veggies, but the can is SO easy! http://www.vegall.com/
Laura, not sure in your town but for Tracy, HEB definitely carries it right beside the canned green beans!
