Hugs and prayers headed to our nephew, Mindy. How terrible. I am so sorry.

Woke up at 4:30 this morning, heard the wind howling outside and thought, "YES!". Then I looked out the window. Not one flake of snow fell here last night. So I went to work (I subbed for one of the secretaries at school today), worked from 7 to about 2:30, handled a few minor crises, then headed to church for Bible Quest. that was interesting : /. We started our lenten soup suppers, which was nice, and we had church services after, which was very cool. We are using a liturgy called Holden Evening Prayer, which is mostly singing and it is so beautiful. then the group going to the retreat sat down for a meeting and we got our duckies in a row. I drove home and put on my sweats and climbed into bed with my iPad. I am absolutely shot.

when I put it in other things, I have never really had an issue with it being dry, but there are times where I use it in a flour tortilla with lettuce and other things, I will throw it in a pan to warm up and add a bit of chicken broth. I do the same with roast after I've done it in the crock pot, which usually ends up dry, I still haven't figured out how to do a roast properly in the crock pot. But I will shred it up the next day, add a bit of beef broth while warming it up in the pan, and then add the beef gravy. Or for beef, I'll even spoon some of the beef broth over the cooled, shredded beef in the container before putting it in the fridge for the night, then it kind of soaks back in and works out nicely.

I just spent quite a bit of time figuring out meals for the next week-including lunches and breakfasts.

Does the chicken reheat well without drying out? I sometime put brocolli and cauliflower or zucchini in them too. If I can stuff in veggies I try to.

While Zeph is ravenous after swim, the problem is more of I think 8:30 is too late to eat. He goes to bed at 9. By the time he showers and puts his stuff away, its time to brush and go to bed. If he stays up later then 9, he has a hard time falling asleep and is a grouch the next day. Once in a while it's fine, but not every day. He could sleep in but his internal clock wakes him up most days at 7.
