Busy day here.  DH took the girls to school this morning so I got a smooth start to the day.  I have a bunch of projects I am working on currently. a meeting scheduled for 2:00, we'll see how lunch goes.  Jordyn's last day of cheer camp is today, they just have a morning session, including All American final try outs this morning, wishing her lots of luck!!  I am not sure what they are doing this afternoon as they are not heading home til tomorrow.  Paperwork and cleaning planned for tonight at home.  DH took the girls out to dinner last night, so we moved the zucchini pie from last night to tonight for dinner.

Good luck Jordan!!! Tracy, seems like you've had some great and healthy things for dinner lately. Where are they coming from? Members of my family (including the 'may I have three chicken sandwiches' in the drive through lane 15 year old) are asking for healthier meals and I need it. The opportunity to spend a little more and provide healthier meals is on the horizon and I want to be prepared.

Apologies to those of you who have already read the Wednesday W's but I'm doing a happy dance and want to shout from the rooftops!!!!! Dh is in charge at work temporarily (could become permanent if he does a good job) and the partners want to talk to him today about a regular weekly paycheck!!!!! What a huge relief!!! Don't know any numbers yet but things are going in the right direction. I'm just going to have to be patient and not bug him about it today. He'll tell me when he knows something.

I'm off work today and tomorrow and after the above news, I'm way more inclined to get things done around the house. Goal for today: main level including the fridge in the kitchen. Tomorrow:downstairs (family room, laundry room, downstairs bath) Weekend: upstairs bath and bedrooms.

Might pay a few bills today and have one or two things to get in the mail. Some Olympics here and there as well. It's supposed to be a beautiful day today so I may try to get the dog out for a longer walk too.

Dinner tonight is a frozen meal from Trader Joe's. I have a few to choose from as I picked up several Monday anticipating that dh's work schedule would be a little wacky this week.

Most of my recent recipes have come from www.skinnytaste.com Its been an awesome site especially because it tends to highlight on the front page in-season dishes/ingredients. I tend to find a new veggie or ingredient, find a few recipes I like and then go to town with them. There are about 6 right now from that site I am rotating in and out and making tweeks to depending on the tastes of the members of the household eating it that night. The crustless zucchini pie that we are having tonight is my zucchini kick, and they had another recipe for the sausage stuffed zucchini boats, I took the chicken sausage from the stuffed boats and substituted some of it into the zucchini pie. I am not trying to go meatless, but DH requested that I try and do at least one dinner a week meatless and this is about as close to it as I get. I have been trying really hard to incorporate more veggies into the menu instead of the standard brocolli and cauliflower. I'm having limited success with Jordyn... but the little girls are much more receptive to my efforts! LOL!

BTW Ami, since you have an ipad, skinnytaste.com has an app. I am printing out recipes as I go along and find ones I like, also because if I make changes to the recipe I can write it (or notes) directly on the recipe for future and I have a binder I put them in, but need to organize them. I have the binder from a long time ago and Jordyn keeps telling me I am going to have to make her one for when she goes away to college. I need to start working on that project also... But anyways, for example the chocolate chip zucchini muffins the kids love, I think came from that website, but it calls for 1 cup of applesauce. We didn't care for the applesauce taste, so I substitute 1/2 cup coconut oil and 1/2 cup applesauce into the recipe, so I have that written down on the paper recipe. Also some of the comments below the recipe give some other great input like subsitutions. I have almost entirely given up using vegetable oil and stick with either olive oil or coconut oil, and I am converting over to mostly whole wheat pastry flour or other flour substitutes to go mostly gluten free. I don't want to take up the entire page, but PM me if you have any questions, I have a few other sites I am pulling stuff from, but the bulk of its coming from this one website right now.

Hi everyone. It's a beautiful day here.  Work went smoothly this morning.  After work, I met up with a friend for lunch. Then I went to the supermarket (*where I ran into same friend from lunch) and the library. NOw I'm home. I wish I could spend a gorgeous afternoon at the lake but I just have things that I need to take care of.

Kayleigh's been working on summer assignments, working on her senior autobiography, looking into jobs and vet office volunteer opportunities.

Not much else happening here.

This looks like a great link, thanks for sharing. Just curious, why is your dh trying to go meatless one day a week? We're longtime vegetarians, but in other families I often see the wife or teenage dds trying to push healthier and/or more meatless meals but oftentimes the dh balks. I even know several dhs who claim they can't eat fruits and veggies for one reason or another!

I can't tell you a specific reason because honestly I don't know. I have been having some health issues and a lot of my research points to my diet being a large part of it so I had begun moving to a better diet in general. He started seeing a chiropractor several months ago, a different one than the girls and I see, and it is very much an all non-toxic, get rid of as much environmental things than can cause illness type practice and part of it is all about diet and exercise and going to a more natural plant based diet. So that combined with my issues, he has sort of spearheaded things more than me at first. Since he works and is on the road a lot, he eats out a lot, so he has been trying to eat as healthy while he is at home as possible, and that obviously puts me on that path. I am glad that he has taken an active part in that part of the household, he doesn't cook or anything, but he is more than willing to help me find new recipes and do the grocery shopping to help me out. He would be plenty happy to go meatless most of the week, but not entirely, and I've learned from the nutritionalist that I am working with that our blood types actually don't do as well on a 100% plant based diet.

That's probably pretty beneficial no matter what; I always think that a lot of small changes can really add up. And, It's definitely nice when you're both (you and dh) on the same page. My dh and I were both vegetarians and "middle of the road" environmentalists when we met (we buy organic food and recycle, but we own two minivans and love our airconditioning! :smileywink:) so we understood each other but neither of us felt pressured (okay, I did try to convert him to cloth diapers, which I had used with my two girls before I knew dh, but the boys ended up in disposables because dh was not willing to go that far, lol!)....
