It sounds like you guys have found a great balance also! It has been a hard adjustment moreso for me, I tend to take longer to acclimate to new changes, especially more drastic ones like this one. DH has been wonderfully support, but I do feel pressured just in the simple fact that between my work schedule, the added stuff I am doing for his business and just managing the household, changing an entire way of eating and thinking about food has been hard. But overall I think we all have been pretty happy wtih the changes, and I have seen such a huge difference in the way I feel, energy levels, etc. that I know it all is worth it in the long run.

Mindy, does Kayleigh help with meals? Jordyn has been the most resistent to all of the changes I have made, but I don't blame her, i would have been even more resistent at her age also.

Kayleigh's not really a help with actual cooking. She does very little of that, she's usually busy with homework when I'm cooking dinner.  Ian is more likely to help with cooking.  Kayleigh says that she regrets not having really learned to cook yet but just hasn't really had the time to devote.  She can do simple things of course like make burgers or pasta.  The meat free Monday thing was her idea so she can't have any complaints about the recipes I try :smileyhappy:   I think she intends to be almost solely vegetarian at college.
