"Why are the Catholic bishops so concerned about Mormons baptising dead parishioners? "

It's insulting.

Or... what if neither is right? Or neither is wrong?

So much of what we do with our belief is frame it to be aesthetically appealing in some way. So much so that we lose sight of the basic reasons for spirituality.

IMO, it is contrary to good spiritual purpose to judge otherwise good people as less than because we happen not to like the framework of their deity,

Nobody is being judged by anyone on the earth through baptism for the dead.

You will find consistency in my posts. I will dis no religious belief so long as that belief does not incorporate put downs of other groups as part of its official policy and belief.

Which means I do not care for LDS being called not Christian,

What if the Catholics and Protestants are right and the Mormons are wrong? And the Mormons end up suffering a particular eternal torment for the distress that they insisted on inflicting on people, despite being asked to stop?

Personally I don't think anyone should baptize anyone who didn't ask for the ceremony with the full ability to understand what they are getting themselves into.

However with a baby at least the individual can make their own conscious choice as an adult,

Wasn't that a South Park episode that only the Mormons were correct?
