Meal plan for the week of 11/26:

SAT: Stout and cheddar meatloaf, mashed potatoes, green beans

SUN: Chicken pot pie

MON: Chili over baked potatoes, salad

TUES: Chicken taco soup, bread

WED: Italian sausage, greek quesadillas

THURS: Chipotle chicken sausage, diablo corn, green beans

FRI: lemon garlic pork, parmesan risotto

Yesterday the butcher had beef short ribs, so I made soup, sort of a beef minestrone, with beans, lentils, macaroni and lots of veggies. I plan to freeze the left-overs for lunches during this week and next.

yummmm! A good portion of my meal plan was based on the fact that I'm making a bunch of food for my friend whose son is in the hospital, potentially awaiting a liver transplant. I figure that when they're back home, she's not going to feel like cooking (or have time). So I'm making them chili (done!), chicken taco soup (done!), chicken pot pie, and black bean soup. So I'm making huge batches and keeping some it for our own meals this week, then freezing the bulk of it to deliver to her.

Sounds like a plan. Lately I have gotten in the habit of making a big pot of lentil or bean soup, chili or similar regularly and freezing portions of it. It is so nice to have a ready meal like that. I am sure your friend will appreciate it.

I don't plan for leftovers, or very rarely. Dh and I take leftovers for lunch, but I don't do usually do leftovers for dinner. I will, however, stew a whole chicken and use it in 2-3 applications for 2-3 different meals. Or I might make 2 chicken pot pies and freeze one, etc.

But a lot of the reason is because I truly enjoy cooking. So leftovers don't appeal a whole lot to me.

I think our deffinitions of "left overs" are over lapping. I include cooking enough chicken or roast or other meat protein to go into another meal, like your example of stewing a chicken (I roast mine in the crockpot) for several recipes that call for cooked chicken.
