I have just a few clarification questions. If they were working on these assignments all last week in class, why does she not have ANY of them done?
Do they have textbooks that they take home OR are the only textbooks for this assignment in the library?
Is it an option to use the internet to complete these pages?
Could you appeal to the teacher to copy the pages in question and send them home with your child?
If you only e-mailed her on Friday afternoon, it would be appropriate to at least give the teacher 24-48 "work" hours (until this afternoon or tomorrow afternoon) with which to respond.
Once the work is done, can the teacher re-grade the papers that hadn't been completed the first time?

Well then, obviously, it is NOT the teachers fault but your own dd-shrug.

How long ago was this assigned that the book could not be taken out of the library?

I thought of this last night, and it's in the plan, so that dd doesn't fall too far behind this week. We are still persuing other avenues though. Honestly, if this is a viable option, the teacher should have suggested it to dd at the beginning of the week last week."

Of course. I didn't expect a response over the weekend. I had hoped for one this morning, honestly. Ordinarily, I would give her a couple of days, but b/c of the urgency, we don't have that option this time. If I don't hear from her by the time dd gets home this afternoon, I will show up at the school to work this out (I'm hoping that she actually works out a plan with dd and it doesn't come to that, though I still expect some sort of response to my email from her....she has a habit of making changes, or *helping* dd in class and never responding to me in any way)."
Maybe because she has not gotten into a "groove" yet with teaching. Why "scold" her and try to get her to lose her job? Has she gotten complaints from other students and parents also?

Again, that's what I'm hoping for. But, that's not the battle I'm fighting for. I don't want dd to fall behind this week. If this week's work can bring her grade back up to a B, then we'll accept that, of course, if she can *catch up* on last week's work, and *potentially* earn an A, that's even better."
I think that you might have to bite the bullet and take the B and not pressure your dd to TRY and get an A. It might not be a battle you want to fight.
