I always thought that there were all kinds of sauces in Italian cooking and that red was only one type of sauce.

Here you go.

Basically, you cook 1/2-3/4 lb of bacon (we use 3/4) in a skillet. Let bacon drain on paper towels, then chop into small pieces. Discard all but about 1/4 C of the bacon grease, leaving it in the pan. Add 3 T white wine to the bacon grease and let simmer, scraping up the bits of bacon stuck to the pan.

Boil 1 lb of spaghetti.

In a non-metal large bowl, mix three eggs, 3 T heavy cream (milk works fine but not as rich), 1 T butter, 1 C Italian cheese (use good/strong Italian cheese - Asiago works well), 1/2 tsp salt and ground pepper.

Drain spaghetti. Toss with cheese/egg mixture then add bacon and pour grease/wine mixture over top, mixing it all together really well. Serve immediately.

It does not reheat well.

The flatness probably had to do with the recipe--it spread too much. It wouldn't matter if you used a scoop or not.
