I was given to understand that there is a particular way to take communion in the Catholic church. E.g., bowing or kneeling, putting your hands a certain way, responding to the priest.... Isn't this all taught in First Communion classes? And would it not be obvious to the priest administering the Eucharist if someone came up who didn't know what they were doing?

I dunno. Maybe she didn't say Amen, maybe she said "thanks be to God" instead, which is what we tend to say. In any case, the priest was able to detect she didn't know what she was doing and asked her if she were Catholic, and when she said no, he just shook his head and pointed to the pew. She got the message.
There is an appropriate way to hold your hands to receive the Eucharist, (you can also choose to recieve by mouth if you prefer) the required and expected response to the phrase "the body of christ" is a simple "amen"
