What about eating issues?

We have debated sleeping issues to death once again....so what about another one of the issues of childhood....eating and/or not eating?
My kids eat just about anything and have a pretty well rounded diet.

For me, it was stressful because of the time crunch and timing conflicts--babies getting sick on the same day that I and DH both had meetings we had to attend, for instance. Trying to fit all household chores, evening childcare, daycare lunch-packing, cooking and meal cleanup, and family fun into a 3-4 hour time slot in the evenings. I do understand that it's variable. Maybe if I'd had a nanny instead of using DC, or if I were more organized all around, or if DH were more helpful, or if I'd had a mellow baby, I would not have found it unduly stressful.

Because close supervision may not be the primary reason those particular people think SAH is important. I've even heard some people say they think SAH is important because they want their kids to have more free, unstructured time, which could translate into less supervision.

For me, it's because frankly I already have plenty of money. If I were actually lacking in anything material, I'd be looking for ways to make more money. But at this point, I don't see how more money (at least, the additional amount I could reasonably expect to make if I agressivly pursued a career advancement) would improve life for myself or my family. I do see how less free time, fewer vacations, or a less flexible schedule would affect our lives negativly. Why is this hard to understand?

Nope. They're not her kids. Being with your own family, and finding that NOT to be down time, is likely rather nonstandard.
No one is saying all time with kids is downtime. That would be silly.
But time with kids CAN be downtime. Last night Ds and I made bikes and motorcycles out of his Kinex. it was fun, relaxing, non-pressured ... it was downtime.
I also worked with dd on cleaning up her room. Not downtime.
Choose your friends by their character and your socks by their color. Choosing your socks by their character makes no sense and choosing your friends by their color is unthinkable.
