Gambling and excessive drinking weren't really things I wanted to do or enjoyed before I had kids, and I have no desire to take them up now, but if I did, I would imagine one could hire sitters or nannies in Vegas just as easily as anywhere else in the developed world.
I took my kids to Vegas a couple of times in that we were going somewhere else (Death Valley) and flew in and out of Vegas 'cuz it was easiest. We took the kids to see a cheesy renaissance jousting thing.

Twice (only once for a 3 day weekend, though).

We have a few friends who are childless by choice, their lifestyle is really that much different than ours.
