Yes, it might take a few turns to get the hang of how much filling to use and how much egg wash it takes to make the layers stick well, but once you have it down, it ought to be fairly quick.

Ravioli also freeze well, IME. In NY we had an Italian supermarket near us, and they carried classic ravioli stuffed with ricotta in the freezer section.
