I know I've asked questions like this before, but what are your favorite healthy, simple, quick meals. Extra points for meals your kids love (or loved as kids, if they're grown).

The best part is that you can stuff them with virtually anything you like. The hard part is rolling up the breasts and keeping the filling from spilling out. Mine don't look pretty but they are good!

I just bought a new cookbook yesterday at my kids' school book fair. It's a Cooking Light cookbook but with each recipe, they include a "meal" by giving suggestions for what to have with it, and then give a basic recipe for that dish as well. I went through it quite a bit yesterday and found lots of recipes I want to try. The best part is that they are healthy, and mostly, relatively quick and easy. I'll share with you any recipes that I try and like.

For this week, on Friday I'm making something called Shrimp and Egg Flower soup. I'm also using their recipe on Wednesday to make whole wheat pancakes. It's ds2's 7th birthday and he requested Breakfast for Dinner as our meal.

I've never made stuffed chicken breasts, but that seems really easy! I may try that. Thanks for sharing all of the other yummy recipes, too.

I don't have actual recipes but here are a few ideas:

STUFFED CHICKEN BREASTS: Pound out chicken breasts then put about 2T of shredded fontina cheese and chopped artichoke hearts on top of each breast, roll up and secure with a toothpick. Place in a roasting or glass baking dish. In a separate pan on the stove, saute chopped garlic in a little bit of olive oil, add chopped mushrooms and saute until cooked through. Add either chopped fresh tomatoes or a can of diced tomatoes. Mix together and add a few Italian spices like basil and oregano. Pour mixture over chicken and bake at 350 degrees until chicken is cooked through.

MEDITERRANEAN ORZO SALAD - cook one box of orzo according to directions. Add diced black olives, chopped sundried tomatoes, feta cheese and toasted pine nuts (amounts to add vary depending on your taste). Mix together olive oil and red wine or balsamic vinegar and pour over orzo. Stir to combine all ingredients. To make this heartier, you could add chunks of shredded chicken or tuna.

ASIAN MARINATED TUNA STEAKS - I usually serve this with cous cous and steamed edamame.

* * 1 garlic clove, minced
* * 1/4 cup reduced sodium soy sauce
* * 1 tablespoon fresh ginger, grated
* * 1 tablespoon dark sesame oil
* * 2 tablespoons rice vinegar
* * 1 tablespoon green onion, sliced
* * 4 (6 ounce) fresh tuna steaks, about 1 inch thick, rinsed and patted dry

Directions : In a small bowl, combine all ingredients except tuna. Put tuna in a ziploc bag then add marinade to bag and seal. Set bag in a shallow pan. Refrigerate for at least 30 minutes (can be marinated overight) turning bag occasionally to coat. Lightly coat the grill rack with nonstick cooking spray. Remove tuna from bag and discard marinade. Grill fish until fish flakes with a fork (about 145 degrees F), turning once. I cook this on an indoor grill on my stovetop.

SPINACH AND PANCETTA QUICHE - Not exactly "healthy" but my kids loved it. I was trying to use up some eggs. This is a Paula Deen recipe I found but I substituted ingredients to make it less fattening.

* 6 large eggs, beaten
* 1 1/2 cups heavy cream (I used half and half combined with milk)
* Salt and pepper to taste
* 2 cups chopped fresh baby spinach, packed
* 1 pound bacon, cooked and crumbled (I used a container of diced pancetta from Trader Joe's that I browned on the stove a bit but it could be added w/o precooking)
* 1 1/2 cups shredded Swiss cheese (I used whatever cheese I had on hand - combo of cheddar and fontina)
* 1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate (I made my own pie crust dough)

Preheat the oven to 375 degrees F. Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Is this your blog? It's awesome! I'm especially excited to see all of the vegetarian recipes. We're not vegetarian, but we eat meatless meals at least 3 or 4 days a week. Thanks so much for sharing it.

Chicken fried rice. I use Frylight (spray oil stuff) so it's very low fat, and a good way of using up leftover rice.

Heat up the oil or spray in the wok.

Throw in chicken, some ginger and coriander (I use ground), peas, veg of your choice.
Once all is more or less cooked, add a couple of beaten eggs and stir occasionally until set.
Add rice, soy sauce, black pepper.
Heat through and serve.

Takes about 20 mins start to finish.
