I know I've asked questions like this before, but what are your favorite healthy, simple, quick meals. Extra points for meals your kids love (or loved as kids, if they're grown).

My favorite simple, quick meal was the announcement of "I'm not cooking tonight everyone is on their own".

I have too many to list here, but I'll throw out a few:


Taco Potatoes -- taco meat, lettuce, tomato, green onions, corn, beans, cheese, sour cream, salsa, jalepenos ... whatever toppings you want on top of a baked potato


Sausage and White Beans: crumbled brown italian sausage (I use turkey sausage), onions, carrots, celery ... brown until done. Add a can (or two) of diced tomatoes, and a can (or two) of cannelini.

It's probably completely inauthentic, but the recipe in my Better Homes and Garden's cookbook for chicken marsala is low fat. It's still really good anyway.

Here are a couple of vegetarian dishes. Everyone loves these except for my 13 yo son, who hates everything and is allergic to the things he doesn't hate.


Black bean and sweet potato burritos--Prick a couple of sweet potatoes all over with a fork, then nuke them until done. I'm not going to tell you how long because it depends on your microwave and the size of the potatoes. But do make sure they're soft. While the potatoes are nuking, chop an onion and a clove of garlic. Saute in a little olive oil, then add a can of black beans, some cumin, a little coriander, a few red pepper flakes, a pinch or two of cocoa powder and whatever else you like. Cook

Flounder, tilapia or salmon grilled or baked with lemon, spinach, broccoli, or asparagus and brown rice.


Grilled chicken with Yam or steamed vegetables.


Whole grain pancakes with low sugar preservative syrup.


Veggie or Turkey Burger with grilled vegetables and baked potato


Baked fish in oven (in tinfoil) with olive oil, squeezed lemon, pepper.

I like to chop up some baby red potatoes, onions, and squash and toss them on a baking pan with a few chicken breasts. Drizzle/sprinkle with olive oil, garlic salt, and thyme, and then bake until the chicken is done.

Taco soup is a big hit in our house, very easy to make and healthy as well....

Chicken fried rice. I use Frylight (spray oil stuff) so it's very low fat, and a good way of using up leftover rice.

Heat up the oil or spray in the wok.

Throw in chicken, some ginger and coriander (I use ground), peas, veg of your choice.
Once all is more or less cooked, add a couple of beaten eggs and stir occasionally until set.
Add rice, soy sauce, black pepper.
Heat through and serve.

Takes about 20 mins start to finish.

Is this your blog? It's awesome! I'm especially excited to see all of the vegetarian recipes. We're not vegetarian, but we eat meatless meals at least 3 or 4 days a week. Thanks so much for sharing it.
