Sunday: Dh is going to make something with cabbage and sausage

Monday: Chicken with Creamy Braised Leeks

Tuesday: Skillet-Roasted Strip Steaks with Pebre Sauce and Avocados and Basque Vegetable Rice

Wednesday-Sunday: I'm going to a conference, so DH and the kids are on their own.

Right now I have enough chicken cacciatore to get me through Tuesday (as well as bread dough for dinner rolls to accompany it. And salad for the week.

Wed: Grilled chicken with lemon pan sauce, potatoes and fresh green beans.

Thurs: Chicken provencal with brown rice.

Friday: Tomato-basil soup with ricotta dumplings and a green veggie of some sort.

LOL, I grew up in the Chicago area, with a huge Catholic population--so huge that schools traditionally served meatless Fridays--well past Vatican II :)
