As usual no real plan. Today I had fresh (raw) pea and cauliflower salad for lunch. For dinner I will have portobello/tomato sauce over some quinoa or pasta.

I am also making hummus and babaganoush with walnuts, to bring tomorrow when I go to a new volunteer job I have. I work with a bunch of students, who all eat crap all day long, and the place is in the boonies with nowhere nearby to buy food.

I ended up getting some beautiful asparagus and zucchini and collard greens for our veggies this week. Gonna throw the asparagus on the grill to go with the chicken legs tonight.

ALDI had green sweet peppers for .50/each and bags of red onions for .89 last week, so dsd and I did some batch cooking, so we've got a pile of meal bundles in the freezer: homemade spaghetti sauce, chili, orange chicken, seasoned taco, General Tso's chicken. I'm excited because I found fresh green beans that looked edible!

"so we've got a pile of meal bundles in the freezer:" -------- That is so excellent. I did that a lot when I was sick, so that I would always have something to eat. Now if I could just get my husband to eat food from the freezer @@.

We live two blocks away from a place that sells $5 pizza, so I like to keep as many "heat and eat" type options around as possible to keep the kids from landing at the fast food counter when they're busy and hungry, and don't want to cook.

I don't have a plan outside of dinner tonight, I need to grocery shop tomorrow.

Tonight is beef and peppers with brown rice.

Makes total sense and good for you. It is amazing how much food you can produce in a good 3-hour whack in the kitchen. Especially if you are two people.

I don't do any planned bulk cooking but since it is just the two of us many meals are cook once and freeze a meal for later or a couple of lunches for me.   My spaghetti sauce recipe willl usuallt give me about 6 meals, combination of dinners and lunches.

Marla, thought of you this evening. I was so busy all day and tired from not sleeping much last night. Had left-over mushroom sauce in the freezer, so ready dinner when I returned exhausted at 8 - heaven! [Dh is away this week.]
