SUN: pesto chicken pasta (artichoke hearts, kalamatas, feta)

MON: cheesy potato soup, salad

TUES: breakfast: bacon, pancakes, fruit, whipped cream

WED: philly fajitas

THURS:

FRI: chicken in honey beer sauce, couscous, veggie

SAT: italian sausage, ricotta and caramelized onion pizza

I was channeling GH last week as this was my menu:

Wednesday-Costco stuffed Chicken breasts w/artichoke & cheese

Thursday-Leftover Stuffed Chicken & Creamy Pesto sauce ravioli

Friday-Chicken Marsala and boiled potatoes

Saturday-Chicken Vegetable Soup (homemade) & Italian Bread

Sunday—no cooking really it was Superbowl, but included chicken wings

Monday—no cooking

Tuesday-Rosemary/lemon Roast Chicken, Green Salad & Italian Bread

Wednesday—Chicken Chimichangas, Leftover Chicken Veg soup

Thursday—Leftover Chicken Chimis & Spinach balls

Here's the recipe:  http://tishboyle.blogspot.com/2011/10/ohio-shaker-lemon-pie.html  It's from the Joy of Cooking.  I just made my regular butter pie crust.  The lemons get almost candied and add texture to the filling.

I also made an Ohio Shaker lemon pie for the first time yesterday.  DH has been wanting me to make one for a long, long time.  He  loves it!  I think it's a definite make again.

I ended up getting takeout from a new Syrian restaurant.  Chicken shawarma, tabbouleh, and baklava. Yum!

On the weekend I made a spinach pie and some babaganoush. We ate the last of it for lunch today, as we were out for a huge brunch yesterday.

I have 4 artichokes that I will steam for eating in the evening, probably along with a salad of some kind. [And, yes, my husband eats stuff like that and is happy to eat it.]

Let's see:

Sunday:  Roasted salmon, mixed kale salad and brown rice

Monday:  Lemon chicken, couscous and roasted broccoli

Tuesday:  Pork Tenderloin, roasted potato wedges and carrots

Wednesday:  Panini's, french fries and a salad

That is as far out as I have planned at the moment.
