Meal plan for the week of 4/7:
Sun, 04-07-2013 - 1:40pm

Sun: whole grilled green chile chicken; corn, mango and jicama salad

Mon: sauteed red cabbage with onions and smoked sausage, garlic bread

The rest of the days may vary, but here's where I've got it for now:

Tues: Chicken and mushrooms in garlic white wine sauce, egg noodles, veggie

Wed: roasted pork loin, roasted potatoes, glazed carrots

Thurs: fancy grilled cheese and tomato soup

Fri: Pork with coconot peanut sauce, rice, veggie

Sat: tabouli, lemon pepper or greek chicken

I've also got a craving for egg salad, so we may substitute egg salad sandwiches in there or have them for lunch Sat. lunch.   I also want to make a pineapple angel food cake.

Yesterday had tomato salad and scrambled eggs with asparagus (more like a pile of sauteed asparagus with bits of scrambled egg) for lunch. Salad, grilled veggies and grilled sardines for dinner. Not sure about this week otherwise, since the kid is showing up tomorrow.

Sunday Curried Rice with shrimp and Sauteed Kale & spinach with carmelized onions

Monday Leftovers--I have a class, they make their own dinner

Tuesday Taco Casserole & salad

Wednesday My dinner is out--Girl Scout Leader apprecation month--dinner & a meeting-

Thursday Marinated pork shops & twice baked potatoes

Friday Pork chops that are lefover made into something else--pasta or soup? and salad

Saturday Lemon garlic halibut with some veggies

I have nothing planned for this week.  Neither of us will be at home all week for dinner, so we're on our own.

I thought I had posted  this last night then discovered I had posted in the wrong place.

As I have said in the past I do not plan weekly menus. When I do it never works out as planned anyway

On Sat I got both some chicken and hamburger out of the freezer to do something with in the next couple of days.  Sunday afternoon I went to the movies with two of my DDs came home to hamburgers and hash browns cooked by DH.

Yesterday DH bought BBQ for some co-workers that he was teaching a class to.  We had the leftovers for dinner.

Tonight I will be on my own for dinner. I will probably do chicken tacos with some of the chicken I have thawed and then tomorrow night do something else with the rest of the chicken.

That leaves Thursday and Friday.

Probably salmon or cod one of those days.   Possibilities on other meals based on what I have in the freezer, chicken penne (already made just needs reheated), turkey, pizza or steak.

Saturday is my shopping day so that meal will be determined then.
