Meal plan for the week of 5/5:

Sun: Grilled poblano pork chops, southwest pesto risotto, asparagus

Mon: Band Banquet - have no idea what's being served

Tues: Chicken with lemon and olives, couscous

Wed: Fettuccine alfredo with bacon, asparagus

Thurs: Band Concert, we'll eat out before that

Fri: Bacon wrapped pork chops, sweet potatoes

Sat: Whole chicken on the grill, corn on the cob, apple/fennel salad

Don't really have much of a plan this week, as I'm only working Monday and Tuesday.  But I'm thinking some chicken filets cooked up Wednesday will see me through the rest of the week with salads and various other veggies as sides.

Monday will be left over pork filets with my leftover salad from Olive Garden today at lunch.

Tuesday will be a rice pilaf with mushrooms, onion, spinach and feta.

No real plan. Today I made noodles. I don't usually eat them anymore, but had a packet of good country egg noodles that somebody gave us and wanted my mom to taste them. I sauteed bite-sized pieces of asparagus with halved baby romas, salt and pepper. Separately I blended 2 garlic cloves and a bunch of parsley with enough olive oil to make a thick paste. When the noodles were cooked, I tossed them in the pan with the asparagus and added the parsley pure. It was good.

No real plan. Going to Zumba and Kickboxing this week so I will probably just make myself some grilled Tilapia when I get home or leftovers from what my hubby makes the kids.

Holy crap that sounds awesome!  One day I'm going to publish all your "I just threw [this] together" meals and make a trillion dollars :D

Uh, oh ~ two classes?  Watch out for jelly legs!  Tilapia sounds great.

lol. Yes, Zumba on Mondays and Kickboxing on Wednesdays. In between I walk at night. Legs ok so far, worried about the arms tonight as we are introducing weights into the Zumba routine lol.

 Hardly any plan at all this week.  Last night dh made calzones with Italian sausage, pepperoni, mozzerella, parmesan & mushrooms. We have italian sausage still left from that so tonight or tomorrow we'll have spaghetti with Italian sausage.  The rest of the week I don't know, it's filled with a band concert, a Girl Scout ceremony, and recital weekend with a graduation party thrown in (plus all the regular weekly classes).

Tonight ~ marinated mahi mahi, whole wheat linguine with tomato sauce, grilled eggplant and peppers, and ice cream birthday cake!

Tuesday ~ turkey burgers and corn, tomato halves, on the barbecue

Wednesday ~ cold salmon and a big salad

Thursday ~ chicken kabobs and more corn, tomato halves on the bbq

Friday ~ chicken parmesan and lemon risotto

Saturday ~ 2 kids parties, so pizza!

Sunday ~ hooray, one of everything the restaurant serves. ;)
