Meal plan for the week of 5/5:

Sun: Grilled poblano pork chops, southwest pesto risotto, asparagus

Mon: Band Banquet - have no idea what's being served

Tues: Chicken with lemon and olives, couscous

Wed: Fettuccine alfredo with bacon, asparagus

Thurs: Band Concert, we'll eat out before that

Fri: Bacon wrapped pork chops, sweet potatoes

Sat: Whole chicken on the grill, corn on the cob, apple/fennel salad

Uh, oh ~ two classes?  Watch out for jelly legs!  Tilapia sounds great.

lol. Yes, Zumba on Mondays and Kickboxing on Wednesdays. In between I walk at night. Legs ok so far, worried about the arms tonight as we are introducing weights into the Zumba routine lol.

No real plan. Today I made noodles. I don't usually eat them anymore, but had a packet of good country egg noodles that somebody gave us and wanted my mom to taste them. I sauteed bite-sized pieces of asparagus with halved baby romas, salt and pepper. Separately I blended 2 garlic cloves and a bunch of parsley with enough olive oil to make a thick paste. Don't really have much of a plan this week, as I'm only working Monday and Tuesday.  But I'm thinking some chicken filets cooked up Wednesday will see me through the rest of the week with salads and various other veggies as sides.

Monday will be left over pork filets with my leftover salad from Olive Garden today at lunch.

Tuesday will be a rice pilaf with mushrooms, onion, spinach and feta.
