Sunday: Fish Nicosia, asparagus (pina coladas!)

Monday: Wacky mac with basalmic tomato sauce and hot italian sausage, apples

Tuesday: Baked sweet potatoes, grilled pork chops, glazed carrots

Wednesday: Fish tacos, ranch style beans

Thursday: Dh, DD and I have a Chef event to attend; I'll steam some tamales for ds before we go

Friday: chicken fajitas, guacamole, black bean salad

Saturday: chicken pot pie - if we don't go to dd's band contest

I haen't decided wich night we're doing which, but there's going to be chicken enchiladas, braised pork shoulder, and barbecued ribs as main dishes three days next week.

Friday—Chard and Cheddar Omelet
Saturday—Pan-Roasted Pork Chops with Cranberries and Red Swiss Chard
Sunday— Thai Curried Chicken Fried Rice with Snow Peas
Monday— Slow Cooker Beef Stew
Tuesday—Scrambled eggs, bread and cheese
Wednesday— Pasta with Pesto
Thursday—Potato Cabbage Leek Soup
Friday—Pizza from a local bakery
Saturday—Risotto with Butternut Squash, Leeks, and Basil

I copied and pasted from my grocery list/menu, so the stuff we had Friday, Saturday, and Sunday are there too.

Drain and rinse kidney beans. Mix them with about equal parts halved cherry tomatoes, cubed avocado and red and yellow peppers cut in strips. Add a handful of chopped cilantro, salt, pepper, pinch of cumin and dress with lime juice and olive oil. Serve on a bed of lettuce if you like. I eat it as meal, but it also goes well with some grilled chicken.

I suspect when she read "baked sweet potatoes" she was envisioning something with marshmallows on top.

Whatever I end up having this week, potatoes and green beans will be figuring prominently, since church had to distribute several hundred pounds of them this past Sunday after the food pantry distribution on Saturday.

No real order of my meals this week. Last night we had grilled, marinated boneless pork chops with egg noodles and corn. Tonight we are having sloppy joes with fries and some type of veggie. The rest of the week will be chicken with panko, steak, chicken sausage, spaghetti, maybe a breakfast for dinner-pancakes. All with sides of starches and veggies (except the spaghetti which will be a salad and bread).

Could be. We do put a little bit of butter and brown sugar on them, but very little. The kids used to want them with a lot of butter and brown sugar, but I gradually weaned them down. The carrots have a glaze of apricot jam, mustard and thyme. Yummmmmm!
