My mother cuts them in thick sticks, then sautes them lightly in good Danish butter and adds a lot of freshly grated ginger. Then she adds a smidge of water, puts a lid on and when they are just about done, she takes the lid off and lets the water evaporate. So far I have not seen anyone turn those carrots down. However, it would probably work just as well with sesame or veggie oil instead of the butter.

Almost everything I cook gets a start with carrot/onion/celery/garlic for the base.

Mine is more usual for onion/garlic as a start for most of my cooking.

I use the whole mess for meat sauce and also for any kind of braised meats, something we make quite often. Just the other day I had my mom (who was visiting) braise a 4lbs piece of pork neck ribs with leeks in the oven, but it included a bunch of onion/garlic/carrot/celery.

That wouldn't work here, DH has a problem with ginger.
