Meal plan for the week of April 20:

SUN: Lemon chicken with capers and artichokes, scallion two-potato pancakes


TUES: Aglio e olio with broccoli

WED: Beef stir fry with rice

THURS: Grilled pork loin, tuscan beans with sage and pancetta

FRI: Quesadillas, tomato cucumber salad

SAT: Browned butter spaetzle, bratwurst

No plan, per se, but tonight I'm doing my ranch chicken with a twist; I coated the chicken with crushed corn flakes after coating them with ranch dressing.   20 more minutes left in the oven and the house smells AWESOME :D

One of my standards these days is a salad of: crushed barley rusks, artichoke hearts (from a can), avocado, cucumber, lemon, olive oil and nigella seeds (also called black cumin). It is really good and makes a full lunch.

Yesterday I had leftover veggies in the fridge: portobellos, asparagus, scallions and couple of half-dead tomatoes. Sauteed garlic and scallion, added cubed portobellos and asparagus in bite-seized pieces, grated in the two tomatoes (this way you don't get the skin, and it is faster than chopping, it also adds just some body and flavor, without making the food all tomato sauce-like), then added about a cup of cooked chick peas. it was really good, as well as filling.
