Meal plan for the week of March 3:
Sun, 03-03-2013 - 10:15am

Sun: Roast chicken, baked sweet potatoes, veggie

Mon: Tortellini soup

Tues: Office happy hour for me, chili dogs for dh and the kids

Wed: Stuffed chicken breasts with pepperoni marinara sauce over wacky mac, mushroom

Thurs: Chicken with sage and peas, couscous

Fri: out for Thai food with dh (anniversary celebration), pasta with jarred (!) sauce for the kids

Sat: homemade pizza with italian sausage, pepperoni, red onion and jalepeno, salad

Tonight I am making beef fajitas. Tomorrow we are having leftover beef and lentil stew from last week. Wednesday-Saturday I will be out of town at a conference. I have left two frozen casseroles for my husband and son. But they will probably have ramen and grilled ham and cheese sandwiches and pizza anyway.

Tonight I'm taking salad over to the son/DIL's to augment their pizza and canteloupe for dinner.

Tomorrow I'm probably going to buy one of the rotisserie chickens from the grocery store and serve with salad, because Monday nights I don't like dinner to be complex.

Tuesday, I'll use some of the left over rotisserie chicken to make an Asian inspired chicken salad with rice noodles, cucumbers, red pepper and sesame seeds.

Wednesday, I'll use the last of the chicken to make spicy soba noodles with carrots and a peanut sauce.

Thursday, guess what?  Chicken!!!  Lemon chicken with broccoli and brown rice.  Possibly the brown rice will morph into a pilaf with spinach, mushrooms, onions and feta.

Friday will be salad because we order out lunch at work on Fridays and I almost always get fried chicken wings with fries.  So dinner on Friday and breakfast on Sunday are very light.

I don't have a daily plan but have bought a bunch of things to make meals. Tonight I am making Baked Ravioli. Another night something with ground meat, chicken, steak, pork chops, ham and pineapples and the horror, hot dogs, fries and beans. lol.

  As I haved stated in the past I really do not plan out a menu in advance.

  I only know two for sure.

  Today is DD2's birthday, tonight we are having pizza, ice cream and cake.

   Thursday DD3 is having surgery so I will heat up the lasagna I have in the freezer from a couple of weeks ago.

   In my freezer I have chicken, cod, salman, hamburger and pork so from that I will figure out Mon-Wed and Fri.

We use couscous much like we would rice or pasta. Ususally serving some sort of sauce over it with a protein.  It works well with thin sauces - it soaks it up and makes the couscous really flavorful.

The Boy - who is our picky eater - loves it. The Girl doesn't lke it - it's a texture thing for her, so we tend to serve it when she won't be home for supper.

My kitchen has been taken over by dd14, who wants to learn how to cook. Last week, she made a Spanish rice dish from scratch and repeated it again last night to demonstrate for a friend. She's mentioned chicken and dumplings and stir-fry for this week so far. Dsd18 arrives home late tonight. She's now 35 weeks along, so her cravings will dictate some of our menu. (Luckily her cravings are sane--stuffed peppers last time.)

I am more than happy to fulfill ingredient shopping lists and let them do the cooking :)

We've never tried couscous. How do you serve it?
