Meal plan for the week of May 19:

Sun: Pepperoni bread, meatballs, marinara sauce, spinach

Mon: apple glazed chicken with spinach and leeks

Tues: Pasta with beet greens and raisins, ham steak

Wed: BLTs, cole slaw

Thurs: Greek chicken pitas, tzitzki sauce

Fri: graduate reception for a friend

Sat: unknown, but probably pork loin on the grill


I also have, to randomly throw in there, broccoli, asparagus, strawberries, watermelon and cantaloupe

We are doing fajitas tonight and hamburgers tomorrow. Shrimp and grits Tuesday and then will be on the road for six days.

As I have posted before I do not do weekly menus.

Tonight we had pork roast, leftover pasta, salad, corn on the cob and watermelon.

I will probably do pulled pork with the left over roast one evening.

I have some leftover sauce from the lasagna I made last night will probably have that one day with spaghetti.

I've made a lot of beets recently; the crop locally last year was very good.

Hey Sav (or anyone else)....I keep seeing this beautiful organic red beets in the store and again at the farmers market, do you have any tried and true ways to prepare?

Tonight is pepper crusted pork tenderloin with bake potatoes, both done on the grill and a salad with fresh veggies and romaine.  I'm going to make a balsamic dressing to go on the salad. 

That's about as far as I have gotten, I will go to the grocery store tomorrow to see what looks good in the form of proteins and decide for the rest of the week.  Veggies were puchased at the local farmers market yesterday.  The weather has turned warmer this weekend so I switch to lighter meals, less stews,soups, pastas and more salads and grilled proteins.   I'm ready for the garden to start producing!

I don't have the stuff on hand to make it.  And I suck at baking.  I'm a great cook, but suck at baking.     No one will think it's a punishment to eat it twice.   But it would be a punishment to me to not get to eat it! lol

However, I'm very annoyed.  Came home  brunch with the BFFs and grocery shopping, to find that dh and The Kids had eaten the pepperoni bread.  Wouldn't be nearly as frustrating except that both dh and The Girl *knew* that's what was for dinner tonight, because we had discussed it.   Grrrrrrrr.

So I made dh go to the store and buy more.  Although the store-bought won't be nearly as good and fresh as the one that I got at the farmer's market yesterday. Harumph!

I guess their punishment is to eat it twice in one day lol. It is really easy to make as I have made it a ton of times but just because they did that, I would have my hubby get take out or taking me out to dinner for ruining my dinner plans. Laughing

In no particular order except for today:

Sunday--Fettucine Alfredo (homemade sauce, not a jar), garlic bread and salad

Hot dogs, fries and baked beans

Meatloaf, noodles and veggie

Sweet Italian Sausage with sides

Pasta with meat sauce

Chicken (probably breaded cutlets as that is hubbies specialty) and sides

Steak and sides
