Meal plans for the week?

Sunday was fish tacos (topped with cabbage, tomatoes, and avocado), mexican rice, corn and asparagus.


Monday: Sausage/spinach rollups, honey mustard cole slaw


Tuesday: out


Wednesday: spaghetti with onions, ham, undetermined veggie, fresh pineapple


Thursday: homemade pizza (italian turkey sausage and cheese for the kids; feta, roasted red pepper, mushroom, kalamata, for dh and me)


Friday: stuffed chicken breasts, couscous, undetermined veggie


Sat: butterfly pork chops, wild rice, grilled veggies (probably bell pepper, portabellos, zucchini and onion)

I don't plan out our meals that far in advance. On occasion, I will plan two or three days in a row. I don't even know what we will be having tonight.

Our meal plan started last Thursday.

Thursday: Venison Taco Salad
Friday: Ham and Cheese Omelets and Green Beans
Saturday: Hot Dogs on whole wheat buns (homemade) and Strawberry Salad w/ Basil Vinaigrette
Sunday: We ate lunch at an Indian restaurant and had leftovers for dinner
Monday: Beans and Rice and salad
Tuesday: Spaghetti and green beans
Wednesday: Chuck Roast, mashed potatoes, and green beans?

We eat a lot of green beans. We have both canned and frozen ones left from last summer's garden. About half the time, we also have carrots and/or sliced apples with dinner.

Normally, I try to plan our meals on Sunday so that I can ensure we have healthy/well-rounded meals every night instead of scrambling to find something every day. Plus, it keeps me from wasting!

This week is a little crazy though b/c we have a busy sports schedule, plus dh is going to be out of town Wed/Thurs nights. I have not really planned well for this week.

Last night we had grilled marinated flank steak, roasted red potatoes, grilled zucchini and squash and steamed edamame.

Tonight, ds9 and dd10 both have lacrosse games in different locations. Dd won't eat until she gets home. The other kids and I are having broiled salmon, whole wheat couscous and broccoli before we go. Dd will probably just have a sandwich and fruit when she gets home. Dh will use the leftover steak for a steak salad.

Tomorrow, chicken marsala w/mushrooms and green beans. Kids might have orzo with it.

Wed - probably spaghetti and meatballs if I have time to make meatballs. If we have that, we'll have salad with it.

Thurs - probably pizza since dh is gone and three kids have lacrosse/baseball practice at the same time that night! I'll make it as soon as we get home from school and then just have some cantaloupe and strawberries as a snack when we get home from sports.

Friday - no idea yet.

I'm obsessive about meal planning. It's the only way my busy life can end up with nutritious meals.

Mon: Chicken (shock!!!) ;) with spinach and tomatoes

Wed: Indonesian chicken served with brown rice, spinach, mushrooms and feta.

Fri: Chicken with spicy soba noodles in peanut sauce.

Yep, that's me. The other thing is that we would end up with boring meals if I didn't plan out. I could easily do grilled chicken, a starch and a vegetable any night of the week b/c I typically have that stuff on hand, but I like to try new recipes or at least "jazz" up the meals - like having chicken marsala. I need to have mushrooms and marsala on hand. I don't like to buy mushrooms unless I KNOW I'm going to use them b/c they don't keep long.

I typically buy the same veggies every week though even if I haven't done a menu plan - broccoli, green beans, frozen edamame, zucchini/squash and sometimes asparagus. My kids will eat all of those. Oh, and I usually get red peppers b/c I'll use those in salad for lunch if I don't have a plan for them as part of dinner.

I also try to keep a bag of frozen uncooked shrimp on hand - I have a lot of quick and easy recipes for that that don't require ingredients I wouldn't typically have on hand. Last week I made a pasta dish that just had garlic, onion, lemon juice/zest, olive oil, shrimp, and red pepper flakes. It also called for arugula, but didn't have that, but it was still good w/o it.
