Sometime this next week, we'll have chicken in the crock pot (cut up, bone-in, with carrots, onions, and potatoes), shrimp with pasta, chicken breasts (maybe Mexican, don't know; I might do Chinese). Other than those, I don't have a clue. That's whats in the fridge/freezer right now. I'll probably go grocery shopping tomorrow. If not, it'll be Tuesday before I go. I don't plan my meals by the day. I loosely plan when I go grocery shopping but frequently change what I cook with what I bought when it come time to cook.

I don't make a weekly menu (although I have at different points).
Tonight I'll probably make the yellow squash linguine and salad that I had planned last night.
Tomorrow possibly chicken enchiladas.
DH will be out of town Wednesday so that night I will definitely do something with onions (he cannot stand the smell of onions so I only have them at home when he is gone).
Other possibles options for next week:
Baked chicken and sweet potatoes
Red bean and rice
tonight we'll probably go out.
Sunday: Grilled chicken, green beans from the garden, cantaloupe and strawberries, fresh bread --- all local except for the strawberries.
Monday: Don't know
Tuesday: Don't know
Wednesday: Don't know
Thursday: Don't know
Friday: Pizza night (although that flagged a bit this week for the first time in 3 years - cross your fingers I may not have to deal with Pizza night for ever!!!)
Saturday: Don't know
Up for grabs in the next week: cheeseburgers, burritos, cheese and veggie omelet, pasta and veggie sauce, lamb chops. I also try to do at least three dinners using all (or nearly all) local ingredients. Most of our meals are at least 50% local anyway.
I try to alternate a meat dinner with a non-meat dinner (I include eggs on the veggie side).
I don't plan out my meals by day but have a rough idea of what I will be having.
Tonight-we had sausage, couscous and corn
Rest of the week: spaghetti & meatballs, turkey burgers, chicken, quesadillas (chicken & cheese), pork chops, steak, breakfast for dinner (usually homemade french toast or pancakes). With sides and veggies (where apply).
I think that that is part of why I can't wrap my mind around making more than one dinner at a time. I only have a vague idea what I'm making on any given night and in consequence only have one main entree defrosted enough to cook at any one time. So while I had hamburger (we had grilled hamburgers, french fries, and salad for dinner tonight) and a whole chicken in the fridge today, only the hamburger was ready to cook. The chicken won't be defrosted enough to cut up to cook until Monday. The shrimp in the freezer doesn't have to be defrosted until tomorrow for tomorrow night's meal. Although, if I go grocery shopping tomorrow, tomorrow's night dinner could change.
