Yesterday I came across a cookbook (in a "Free - Take One" box) that had lots of tasty recipes that involve fruits and vegetables.

I made some steamed veggies and fish for lunch, but it is, of course, not exactly wildly tasty. So, as a "sauce," I put some unsalted pumpkin seeds (about 2 tablespoons), juice of half a lemon, clove of garlic, a little salt, a huge handful of mint and parsley and some olive oil in the blender. Then I used that as a pesto-type thing for the steamed food. It was way easy and very tasty.

That sounds good. Frozen peas are so useful. You can also boil them with a little chicken stock a clove of garlic and a small onion, then pure and add some fresh mint (or don't), throw some croutons on top and you have a yummy soup in about 5 minutes flat.

One of my favorite salads is chopped avocado, tomato and red peppers with lime and cilantro. You can add cooked kidney beans for more bulk.
