Unusual Thanksgiving dishes

In an effort to deflect the inanity that other threads have devolved into, let's do something different. Do you serve any unusual dishes or anything with a special family history? And for those of you who make stuffing, what kind and why? And do you actually stuff the bird?

I'll be in St. louis in the spring of 2012. Since there are at least 2 iVers (or previous ones) there and you're pretty close, we should do it then .... :)

I think the only thing "unusual" that we do is not make all the "usual/traditional" food.

i forgot about the stuffing with sausage, my family used to make it that way too. i love stuffing but i probably smother it with more gravy than i do the potatoes, it's so dry.

I like all types of stuffing. My family likes Stove Top so that is what I make-lol!!

oh no, not a boxed food, J/K. when i make a ham, i serve stove top with it, the kids and DH love it, i like their different varieties. it's only on the holidays that i pull out the PF stuffing, broth and whatever the heck else and make it myself. yea, there's a recipe buried somewhere i'll follow, LOL.

I would have rather made homemade but they would not have eaten it so I feel they should enjoy the holiday too.
