I think I generally prefer hot food so I liked the idea of rotisserie chicken as here it's cheaper than buying and cooking a raw one but I don't think I'd add the Mexican bits. I might make the watermelon and mint sald and the tuna panzanella - no body really eats panzanella here. Nor jicama or ceviche. I've heard the names but don't really know what they are. I 'd have hummous in a sandwich for lunch and the roast beef and pesto. I don't really like cold soup. Nice things to think about,

They all look yummy except for the avocado soup.

I think I would make the one with the rotisserie chicken, and the shrimp roll.

The only problem is that rotisserie chicken costs a lot here, thus making it a very expensive tostada. And I'm picky about shrimp and would like to start from scratch...

I thought of you today, Tulip, when I was at the supermarket. There were frozen cooked shrimps available. Expensive, but these were pretty big in size. I think if I were living with someone or entertaining a lot I'd keep a couple of bags in the freezer as a just-in-case - it would be easy to add these to fried rice or noodles (or even instant noodles), to a soup, etc.

Now you are making me crave a nice shrimp curry!!

I often buy a corn salad at the supermarket. It's basically corn kernels with some pieces of celery as well as pieces of a chicken luncheon meat (as a substitute to pieces of fried bacon), dressed in a light herb vinaigrette of some kind. It makes a good base for a salad - just add other elements et voila, salad is ready.
