This is how I cleaned up my veggie drawer a bit yesterday.

1 small head of broccoli, yucky bits removed
inside pieces of a head of celery
1 slightly soft medium onion
1 large bunch of spinach stems
several cloves of garlic
spoonful of chicken bouillon
small scoop of flour
water
cheddar cheese
creamo that DH bought instead of whipping cream

Chop up broccoli, celery, and onion.

Sounds yummy... I like soup I've just come to accept it isn't something I'm good at making. Not sure why...

Mine usually ends up tasting like veggies and/or meat and/or beans floating in water, regardless of how much chicken base I use, so I'm glad this one turned out so yumfully.

LOL that is how mine tastes too... Dh says I don't use enough salt but if I wanted something loaded with salt I'd buy a can of soup and it would taste like something.

DH loves salt, too. I always tell him that he can always add salt, but I can't remove salt from mine!

DH has high blood pressure so I really watch the salt, but soup just doesn't seem to have much flavor unless you salt it to death. I agree you can't take the salt out and once I started cutting back I realized when I do make some our favorite packaged stuff it just tastes horribly salty.

Packaged and canned foods have an incredible amount of salt in them -- DH will take a can of soup to work in his thermos, but first he'll rinse the noodles, veggies, etc. off and pour plain water on top. It still ends up tasting like soup.

That is a really interesting idea... never thought of that. I'm making a roasted chicken tonight and I'm thinking of trying to make some homemade chicken stock.

How did it turn out?

Like slightly chicken flavored water... I'm not sure it is worth adding some bullion to make it more chicken flavored. Our stores finally have a sodium free bullion but it is expensive.
