I'm on a freezing pancakes kick right now.
I have a pancake recipe from the Fanny Farmer cookbook that I love:
1 1/2 cups milk1/4 cup oil2 eggs2 cups flour4 tsp baking powder1/4 cup sugar1 tsp salt
1 dozen 1/4 cup pancakes
It makes a really nice, light, fluffy pancake with no effort at all, which is great.
I just make plain (not from a box mix) most of the time.
