Hey Andrea...there is no such thing as a dumb question.
You leave it on the counter...in the fridge it will remain as yoghurt. Being explosed to the air outside the fridge is what allows it to "melt" and the whey to drip free. I forgot to add that when you do eat, it tastes so good to flavor the cheese with a little maple syrup or honey. I also add a little vanilla bean to mine.
when you are letting the whey drip out, do you keep it in the refrigerator?
