Potty-training question (may be TMI)

Sorry if this is a little graphic, or TMI, but I thought I'd ask you all. My girls are turning 3 in a few weeks. I have them both finally peeing in the potty (yay!!), and Jenna is very good about it. She will tell me, and hold it in until she has a chance to go. Tessa is not as good or consistent, and has had several wet pull-ups/panties. Neither one is dry at night yet, and we're trying to limit the liquids a few hours before bed (even my almost-5 year-old still pees the bed on occasion!).
My question is this: I still have both of them in pull-ups until they do "the other stuff" each day. The problem is, they have yet to do "the other stuff" in the potty. I've sat them there after meals, when I've thought they need to go, etc. and they'll sit and sit, and you put a pull-up back on, and they'll poop in that. They'll hold it until they have a pull-up on, in other words. And Tessa still prefers her pull-ups, and I think that's one of the reasons she's still wetting them too. She asks for a pull-up when I dress her in the morning. I do put panties on them after they've pooped for the day, but we had a problem this weekend, because Tessa pooped 2x in one day, and messed her panties up IN VAN-GO (our van) no less! It was horrible, and I had to wash the car seat cover, and throw out the underwear. I'll spare you the details! LOL! So I guess what I'm wondering is if maybe the pull-ups are the things that are keeping them from being fully potty-trained. Maybe I should just stop the pull-ups altogether, except at night, and sit them down on the toilet once every hour until they poop?? I don't know what to do to avoid them going in their panties, though, and that's what worries me. But since they pee in the potty, I'm tempted to get rid of the pull-ups in hopes that they're the reason they haven't started pooping in the potty yet (knowing I'll put a pull-up on them so they can poop). What do you all think? Does it sound like they're ready for that, or am I just in for a ton of laundry and mess?
Thanks if you read this TMI thread and have any advice. It's appreciated. You'd think by kid # 4 and 5 I'd know all the answers, but my other 2 were boys, and every kid's different!
