sippy cups and self feeding

My ds is now 1, and he still just throws the sippy cup on the floor. I have used one of those bottles this whole time that use the plastic throw away liners, and I guess he never had to really learn how to tilt his head back in order to drink..eventually, the fluid WILL reach his mouth even if he has it totally upright. So I'm thinking that may be part of the issue..I'll know not to do that with the next kiddo. In the meantime, how do you get them to try the sippy? I figure I'll ave to do it gradually like cut the midday bottle, but what do I do if he just screams his head off and won't drink? I mean, I can't deprive him just b/c he doesn't understand how to do it, can I? Any ideas from you ladies who had trouble with the sippy issue would help.
Also, about the self feeding, he's getting better at it, but is getting into a picky stage where I either have to feed him myself b/c he throws everything off the tray (even when he's hungry) or he refuses to even eat from me feeing him sometimes. He'll feed himself cheerios and anything similar like crackers, etc. He's beginning to feed himself fruit in the small pieces. One day, he fed himself meat, but that has ended, too. He actually fed himself with a spoon one day when he was 7 months old, but just for the day..now he just bangs it on the tray or throws it down.
Your advice is welcome. He's a first child, so no one to learn from but mom and dad who aren't exactly eating the same since we use forks and glasses.

Thanks for that tip, but let me ask to make sure...you said she was drinking water and juice on those days before she drank from the sippy with milk...how were you giving her the water and juice? Still in the bottle or was she already at least drinking from the sippy for those things? See, David won't drink from it no matter what's in it...so let me know if you can how to even begin the sippy with ANYTHING in it...lol.

She very rarely drank from the sippy cut when I took the bottles away.
