My husband's birthday is coming up next week and I want to do a get together with friends, i want to ask if any body has any good ideas for food, that's easy to make and good, since I might be doing at all by myself, I don't want to end up spending to much time in the kitchen cooking, especially taking care of DS at the same time.
Should I make invitation with RSVP's?
I appreciate any ideas.

What about lasagna? You can make that ahead of time and freeze it, or just make it a day ahead. Then, pop it in the oven, add some garlic bread, or even just a nice italian bread with butter, toss up a big salad and you're good to go!! Or, just make use of your crock pot. I don't know how formal/informal you want to be, but what about a big pot of chili? That takes almost no effort and can be left on the stove, serve it up with all the fixings, make a nice big corn bread and you have dinner. I you are making a meal, you need invites with RSVP's, for sure!!
