I have to go shopping one of these days, all I have in the house meat wise is a whole chicken...any brilliant ideas?

I am making whole chicken, baked stuffed with a wild rice stuffing I made with cranberries(not to many or overpowering) and walnuts. (These are items I have in my freezer since I always buy extra during the holidays when on sale).

We are having a big salad and rolls with it. Thanks for asking, I love reading everyone's ideas!

Well...We are having....FROZEN PIZZA and frozen pumpkin mousse pie (pampered chef recipe). It is just me and the kids so pizza it is.

Here is my idea for your chicken...Chicken Enchilada Soup with Parmesan Knots. Both recipes are so easy and GOOD! If it sounds yummy, I will send you the recipes. I am also always looking for new and easy recipes. IF you know any recipes I can freeze or crockpot recipes, please share! I have a baby that need much attention in the evenings!

I'm making chicken stuffing casserole (DH loves it!)

Boil & debone chicken, and combine with 2 cups of broth, 1/2 cup melted butter, 1 can cream of chicken soup, 1 can cream of celery soup, and one box of dry stove top stuffing with seasonings. Bake at 400 for around 30 minutes.

(I use low fat & low sodium soups & stuffing)

super easy, and super yummy!

We just got the water back up and running today (it's been out all week here due to flooding) so....we ate out LOL! Hey, the restaurants have been closed too :) Besides if I cooked anything in that kitchen before I finish scrubbing it from sludgy brown water coming through the pipes, we'd all drop over dead, I'm sure of it... I was so tickled with the ice maker at the restaurant that I just stood there giggling at it... It's been a long week lol :)
