Good morning moms! This is Adrienne from CA. I was wondering if you would share some of your dinner ideas and recipes with me. DH and I are so bored with our usual meals. I do not have a creative cooking bone in my body and need some help. BTW, DH and I are pretty healthy eaters (no cream sauces or tons of cheese kinda thing) so that narrows down our selection. Please share if you have some delicious ideas. Thanks!!!

Here is something we have quite often.


Mix a can of tuna with 1 small finely chopped onion. bake a few whole pitas in a preheated oven for about 4 min on 250 degrees. put tuna mix on top and drizzle with olive oil and sprikle lightly with cheese of your choice. cook till cheese melts. Serve with a nice dinner salad!

That sounds delish! Thanks for the idea. My husband just got back from a fishing trip and caught some albacore, so I may even try that tonight!! Just want to tell you I enjoy the little games and comments you always have posted on here. :-)

Here are two easy favorites that are healthy.

* Lemon Chicken:

Dredge boneless chicken breasts in flour and sautee with EVOO (extra virgin olive oil) until brown on both sides. Transfer to baking dish. Pour chicken stock over chicken--just enough to touch bottom of chicken. Add whole fresh mushrooms around chicken and squeeze two lemons over chicken. Bake at 350 for 30-40 minutes or until stock is evaporated. Serve with rice pilaf and a green veggie. Yum!

* Turkey meatballs:

Prepare your marinara sauce (or used jarred if you wish). Take ground turkey and mix with flavored bread crumbs and form into balls. Sautee turkey meatballs with onions and garlic until brown and drop into sauce. Simmer for at least 1 hour. Always check a meatball to see if it's cooked inside. Serve with your favorite pasta or make turkey meatball heros.

lol..I have extra time on my hands this afternoon!...dh got kids mcdonalds so no cooking lunch!

Here's another EASY kids-favorite:

Tuna/Veggie caserole:

Boil pound of pasta (my favorites for this dish are medium sized shells or elbows).

In sauce pan saute chopped onion and celery until clear in color, then put in (this may sound weird, but it's great!) 8-10 slices of american or cheddar cheese, can of cream of "anything" soup, fill up empty soup can with milk and pour in, and a heaping tablespoon of mayo. Melt until creamy in texture.

Add boiled pasta to saucepan and mix together. Add any kind of frozen veggies and one can of tuna (you can use can of salmon or chicken, if you wish).

Mix together and place in baking dish. Sprinkle crushed potato chips or cornflake crumbs on top (so it won't burn in oven). Bake at 350 for 40-45 minutes.

Yes with EVOO (extra virgin olive oil) with some onion and garlic. I don't have time to do that, so I just drop them into my homemade sauce and let it simmer for about 2 hours. They come out real soft and even my DS eats them (he's 11 months)! If you like peppers, add them to the sauce because turkey meat tends to be on the nonsavory side and anything that can "kick it up a notch" is good for this recipe.

Another note: you can use ground chicken, too. or even mix up 1/4 lb. ground turkey, 1/4 lb. ground meat, etc...
