We are making fajita (chicken) nachos. We usually go to a place called "Chachos" for margaritas & they make the best fajita nachos. I told dh last night that I should try making them here at home. They are very easy, I just hope they taste just as good.
I just put refried beans (from a can, cuz I am lazy..lol), grated cheese (sharp cheddar), and I am going to use chicken fajitas that come already made you just have to heat them up a few minutes in a pan. I am going to cut up the fajita pieces then put them on top of the nachos (nachos already have bean&cheese on them of course). I usually make a whole bunch of them first, then place them in the oven till the cheese melts. Then to top everything off, you can put sour cream, avocado (guacamole) & jalapenos. YUMMY! I can't wait.

P.S. Lesley, do you have a supermarket there that sales fajita meat cooked (frozen)?
We are having Chicken and Rice by Kraft. It is really yummy and easy to make. Andrew just loves this meal. We will also have some garlic bread with it.
Unfortunatly, no, we don't have anywhere here that sells it ready to go. Thats why I'm always going to the States lol
We have made something like it before, but we had to cook the chicken in seasonings, make the guacamole, and salsa (I hate the bottled crap here) and mashed it all up, but it's just not the same lol!!!
