I really need a few days off. I have a lot of grading to do, my annual report (5 pages of questions to be answered in narrative)

Sorry you're stressing. I can't really cheer you up but, I can commiserate. Everyone in my school was saying this was the lonnnnnnngest week in creation. I felt it especially because I was observed this week, which wasn't my biggest stress. My mom had open heart surgery on Monday. On Monday I was a basket case and I've been distracted all week.
I'm hoping she'll be home by T-day. She's going to live with me for a few weeks while she recovers since she lives alone. If all goes well I'll be hosting Thanksgiving with my brothers and their families attending along with my mom.
One of my favorite T-day recipes is a sweet potato casserole. It's almost like dessert. You mash the potatoes with butter,cinnamon and eggs, place it in a casserole and top it with a streusel topping, bake and devour. It's so good I even eat it cold sometimes.

I *just* finished making this dish with my students!! We are having our annual Thanksgiving lunch tomorrow so the cooking started today :)


I haven't tried this dish before (at home we do the sliced sweet potatoes w/ marshmallows on top) so I'm looking forward to the goodness you described...yum!


I'll keep my fingers crossed that your Mom will be home making a great recovery by turkey day!!

Wow, you have a lot on your plate and it isn't turkey, lol.


I always felt for my college professors that had to deal with stuff like that around the holidays. We are on the block schedule so we start a new semester... but not until the end of January.


I hope you manage to have a nice holiday! We are just finalizing plans today. Both families are in-town so we go through the whole "we are spending too much time with your family and not enough with mine" EVERY holiday so there is a certain amount of stress there....oh well....we should be thankful that we both have families that we love dearly and want to spend all our time with :)
