Day one, 8/9/07

9:30 am: I don't feel like eating! I know this is NOT the way to diet (I did eat waffles & sausage for breakfast) but I just DON'T feel like eating! The current temp in my town is 87° with a heat index (feels like temp) of 100°! It's only NINE-THIRTY ONE!! (My poor DD is going to be so exhausted when she gets home from school--she has recess at the END of the school day!)

When I woke up this morning the temperature was 83°; I ate a popsicle (5:30)
After DD left, walked 1/2 mile in 83° heat; came home, drank water & showered
Ate 2 Eggos & 2 Jimmy Dean sausage patties (9 a. m.)
I'm about to eat another popsicle (or get some chocolate milk)!

Starting weight is 160, which is what I was back in 1/06; I'd like to get back down to 148, my weight before I found out I was pg with Sherina, my now 9-year-old DD. I gained 11 pounds during the pg, then put on too many pounds after she was born 'cause I had a hard time establishing a schedule (and I snacked too much). Fortunately, after 9/11 I decided to lay off the snacks, but I've still had a hard time losing the weight. DH & I joined our local World Gym back in 8/04, but had to let that go after Katrina struck one year later. He was diagnosed with diabetes 4 days prior to Katrina making landfall.

I'd love to get back to cooking meals for the family again, but it's tough with a daughter who doesn't eat much meat & a DH on a restricted diet. Today I have to cook pork chops before they go bad so I'm going to search one of our diabetes cookbooks for baked chops.

Wish me luck--this won't be easy!

Edited to add: I'm baking 2 of the chops with Oven Fry for myself for lunch (and possibly tomorrow's lunch) & using the recipe Sue just gave me for the other 2. Now I just have to remember to text DH not to bring home dinner!

Here's a way to cook pork chops, and not heat the oven.

I may have to experiment with the seasonings as we only have onion powder & garlic powder (although I think we have them both minced) & DH isn't too keen on much onion. I just printed your recipe & will search for others...thanks!

Actually my family isn't either, but I scrape off the onion before I serve it so they don't know that it is there.

Day 2 8/10/07

One hash brown & one sausage patty for breakfast, with a bottle of Sunny D (11 ounces)
Lunch will be another pork chop sandwich (I made two but only ate one yesterday)
Tonight is up in the air 'cause Friday night we go to a local children's museum for their Free Friday Nights & we usually eat out.

I've had about 32 ounces of water today so far; I woke up @ 4:15 & drank some, then drank more when I came home from the bus stop (didn't walk--too humid). Had more about an hour ago & will probably drink some with lunch.

Baby steps!

Just fyi what I TRY to do when we go out is box about 1/2 the meal and not restrict myself from what I like just eat half............ GL
