Prosciutto and Spinach Focaccia Sandwich

This is a great sandwich that showcases the awesome flavor of fresh basil! A basil-flavored mayo is spread on soft Focaccia bread. Between the bread you'll slip delicate prosciutto, roasted red bell peppers and fresh, leafy green spinach.
Prosciutto and Spinach Focaccia Sandwiches
Total Preparation Time: 12 minutes
2 Tbsp. fat-free mayonnaise
1/4 cup chopped fresh basil
1 8 oz. loaf Focaccia bread
8 oz. Prosciutto OR low-salt smoked deli ham, thinly sliced
1 (7-oz.) bottle roasted red bell peppers, rinsed, drained and sliced
2 cups baby spinach leaves
In small bowl, combine mayonnaise and basil; blend well.
Cut Focaccia bread in half horizontally. Spread the mayonnaise mixture over the cut sides of bread. Place prosciutto on bottom half of bread. Top with roasted peppers and spinach, and cover with top half of bread.
Cut the sandwich crosswise into four wedges. Wrap securely in waxed paper.
