I am looking for ideas for dinner this week and am wondering what you ladies plan on cooking!

I know I am going to do homemade pizza one night but the rest is up in the air...

You are in luck! I'm working on my 2 week menu. I do easy things on the weekends like bfast for dinner or tacos & I leave a gap or two for leftovers. I'm not done, but here's what I have so far.

Chicken Parmesan
Bruschetta stuffed chicken with broccoli
Hot dogs
California Chicken (recipe on my FB) with beans
Mongolian beef with brown rice & edamame
Tacos
Pancakes & bacon
Chicken Chile Verde
Orzo with Cream Chicken, with asparagus (Betty Crocker recipe)
Chili & cornbread
Lemon Linguine (Paula Deen) & shrimp
Crockpot Hoisin Chicken (recipe on my FB) & brown rice

Laura, I'd love your crockpot recipe too!

Here you go :)


This is my favorite slow cooker: Chicken with Thai Peanut Sauce


2 packages of chicken breast tenderloins cut into bite size pieces


2 green onions sliced (about half a bunch)


1 chili pepper chopped


1/2 c crunchy peanut butter


3-4 tablespoons brown sugar


1/4c soy sauce (we use low sodium)


1 1/2 cups chicken broth


1 can of cocunut milk


red pepper flakes great but optional


Combine all ingredients, EXCEPT the cocunut milk.

Tonight I'm making vegetable fried rice, and tomorrow, DH is making caribou meatloaf, mashed potatoes, and green beans because I'll be in class. The rest of the week isn't set, but we have these planned:
grilled caribou brats w/ corn on the cob and mac and cheese
breakfast for dinner night
steaks, broccoli, and some kind of sweet potato creation (I have some I need to use)
meatless spaghetti, salad, and garlic bread
leftover night

I've jumped on the band wagon for meal planning anf just love it.


Mon- Toritlla soup(tiffany recipe)


Tues- meatloaf, mashed papas and salad


Wed-homemade pizza with whole wheat crust(wish me luck this is a new one for us)


Thur- CA chicken( another Tiffany reccpie)


Fri- leftovers


Sat-MIL making dinner


Sun- something easy will be cooking for next week.


Okay ladies so since i am eating by six i have been making all my meals on sun. Well my mil came over yeterday and asked when we are eating the meatloaf and i said tues and she said thats gross you guys could get sick letting it sit for 3 days in the fridge. Is that true? I mean we eat leftovers all week long sometimes whats the difference?

Okay we are eating it tomorrow and i made it last night around 9pm. So we should be good maybe next time i will get it all ready and make it the night before. Thanks!!!
