Made these Christmas Eve and they are definitely a permanent part of our veggie rotation. The kids weren't crazy about the goat cheese, but that's easy to leave off their portions since you sprinkle it on at the end:

What's even better...tonight I made them with dried thyme out of my spice cabinet because i didnt have any fresh herbs, and they were just as good. I'm thinking goat cheese will freeze pretty well since it is so moist. I bought a twin pack of goat cheese logs at Costco since it is waaay cheaper there than in the regular grocery store...I WILL find a way to store it. :)
