So I just realized that D was cold. He had a onesie and socks on when I grabbed him and wrapped him in a blanket. DH has the ceiling fan on. It's cold on the house because I wont turn on the heat. And I have a cool mist humidifier running. I put him in a sleeper gave him a little food and he's out. Now to see if I can put him down and keep him asleep.

Can you just chunk the chicken, dip it in egg then bread crumbs and toss in the oven for quick chicken nuggets?

Yeah, I thought about making oven-fried chicken. I'm hesitant to use much egg since G might be allergic. He would probably be OK since he eats bread, pancakes, store-bought nuggets etc. that have eggs as an ingredient. I really need to bring him to an allergist! I keep forgetting to remind DH to send me the insurance login so I can find a provider!

Michelle, you just described me! exactly! I always second guess myself and assume that mistakes are mine (when mostly they aren't). Luckily I don't have to talk to people, because I am not good at that either! Anyway, you seem really smart to me. I bet we are all too tough on ourselves at times.

Awww, poor baby D! That is one of my biggest sources of stress with Gabe at night, that he will get too cold because he doesn't pull is blanket over himself. So I bake him the first half of the night, then he is comfy for the second half. Ugh. LOL

I found a gnocchi recipe recently that uses ricotta and is (supposedly) easy. I am making that this weekend. The ricotta means it will have enough protein for me. Yay!

As for over fried chicken, as a non egg alternative, you could coat the chicken in greek yogurt and dredge it in a mixture of ww bread crumbs, parm, and ground nuts and herbs. Then bake in the oven and you have nuggets.

Oooh, Ok. I might have to do that instead of the egg. At the store tonight I picked up ingredients for some of the recipes everyone has been posting - including greek yogurt for the cardamom chicken. But I can't find a flippin' mortar and pestle to grind the cardamom seeds. (Been hoping to stumble across one in my usual stops, and it's not happening.) So I won't be making the cardamom chicken just yet. But the yogurt is sitting in my fridge waiting patiently!

And I do have both whole grain stuffing and regular bread crumbs. I'll probably mix them. When we used the stuffing last week for a recipe Christine posted the dish was super-salty. Don't know if it was the stuffing mix or if DH over-salted the meat. I opened a new sea salt with built-in grinder last week and this one is easy to go a little overboard with. Our previous was a small one from the grocery store and this new one is the jumbo size from Costco. Hopefully it is adjustable!
