Lettuce Wrap Meatballs

My cousin is an editor for a lot of cookbooks.  She gifted us a few and one is The I <3 Trader Joe's Around The World Cookbook where I found this little gem.  All the ingredients can be purchased at TJ's.


1 shallot, quartered
4 green onions, trimmed
4 cubes frozen crushed garlic (I just toss in a lot because we love garlic)
1 jalapeno chile chopped (I omit this because of the kids)
1/4 cup chopped fresh cilantro
1 pound ground turkey
3 tablespoons soy sauce
1 tablespoon brown sugar
freshly ground pepper

2 cucumbers chopped
handful shredded carrots
8 basil leaves sliced into chiffonade
TJ's Sweet Chili Sauce (I use the Thai Sweet Chili sauce from grocery store)

Preheat the oven to 425 and line a rimmed baking sheet with parchment paper.  In a food processor finely chop the shallot, green onions, garlic, jlapeno, and cilantro.  In a medium bowl combine the chopped vegetables with the ground turkey.  Add the soy sauce, brown sugar and a few grinds of pepper and mix to combine.  Form into walnut-size meatballs and place on the prepared baking sheet.  Bake until cook trough 15 to 20 minutes. Serve the meatballs in the lettuce leaves and add garnishes.

Looks yummy...I love that it's made with turkey, too!
