When my bil and sil were here ~ they made us homemade mexican food, and I'll definitely be making it again!


Did you know if you mash a cooked potato in your taco meat, it holds it together so it won't fall out of the tacos?


...and homemade spanish rice and beans is really not that hard?


LOVE it!


I get all my new recipes from people I know ~ and get ones they say their kids like.

I just made grilled lemon chicken the other day and it was YUMMY! It's not a very hard recipe and I probably could have thrown it together myself but it was nice to have a guideline. I found it on someone's blog.

LEMON CHICKEN
Juice of 1 lemon
3 Tbsp oil
1 tsp minced garlic (I used 1 clove)
1 tsp salt
1/4 tsp pepper
1/2 tsp oregano
1# boneless skinless chicken breast
Combine all ingredients in a gallon size ziplock bag. Squish it around till everything is blended and the chicken is well coated. Marinate overnight in the refrigerator. Grill (or cook in skillet).

I didn't marinate it overnight but I bet that would have made it even better.
