I'd stick with either the all-single (Eliot) or all-double (Elliott) spellings -- Elliot and Eliott always look off to me, if you KWIM. All or nothing, so to speak. ;)
FWIW, I immediately associate Eliot with George Eliot, so it seems more feminine in my mind (though my second thought is T.S. Eliot, so that's admittedly skewed logic LOL). Still, I prefer Elliott for a boy (unless, of course, it IS a nod to George Eliot).
Ya know, I thought that would have been easy until I stared at your choices for a few seconds & they all started to look odd to me. It's amazing how our minds work when we ask them to! It's like repeating a common word a few times ... it starts to sound like a foreign language, LOL.

I can't remember if you are thinking of Elliott for a boy or girl (I know someone was thinking of it for a girl).
For a boy, I think Elliott is a better spelling. For a girl, Eliot (in honor of the author George Eliot, aka Mary Anne Evans)
