This is completely unlike me because I hate all of these "Kate" names that have sprung up recently. But, rather than Kaitlin, I think I'd name her Kaellen or Kaelen or Kaylen (all pronounced like Kaylen) so that both names are actually present in the name. None of these are names that I'd actually use, but I do think that I would take a Kaelen more seriously than I'd take a Kaitlin, especially given how many little Kaitlins there are running around right now.
If you're stuck on Kaitlin, then this is the spelling that I prefer because it most closely resembles the actual spelling of the name, Caitlin.
I actually really, really like Ellen for a first name. It seems a shame not to use it. I also love the idea of naming your daughter after both of her grandmothers...so sweet, they'll probably both cry when you tell them! :-) Other options may be Lenka, Elayn, Kathren, or Kallen. I know a college professor named Lenka, and it really fits her. It's pronounced like it looks: Lehn-kah, or some people say Lank-ah.

I voted for Kaitlyn (which also happens to be my oldest dd's name) because I believe this is still the most common spelling of the name in the U.S. Kaitlin is also fine, IMO, as it does resemble the traditional Caitlin spelling.
However, if you're trying to name her in honor of your mother and MIL I'd almost definitely go with the similar name Kaylen, as it actually does combine both the names KAY and elLEN, KWIM?
