Catherine is my favorite, but I like any of the spellings without a Y. I think the Y makes a classic name look trendy.

My sister is a Kathryn (which is the most common/accepted y spelling) and later on when people started sticking Ys in everywhere they didn't belong, my mom really regretted not using Katharine or Katherine.

I agree ... Catherine is by far the most classic (and if she really wants a K instead of a C, I'd go with Katherine over any of the other spellings), and I don't like the Y spellings either, especially with the current trend of just sticking a Y in anywhere you can fit one LOL.

Another point you might want to make to her is that of pronunciation. While she's probably looking at these as various spellings of an identical name, many will pronounce Kathryn, for example, as two short syllables and Katherine as more like two-and-a-half (or even three, if they really stress the e). Just something else she might want to consider.
